Fig roll oat bars
Ingredients for 16 bars:
- 280g dried figs or dates
- 50g apricots or raisins
- ½ cup hazelnut butter (or any other type of nut butter)
- 2 tbsp pumpkin seeds and/or sunflower seeds
- 150g oats
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- Melted dark chocolate to drizzle on top
Method:
- Line an 18cm square baking tin with a baking sheet.
- In a food processor, pulse the chopped figs and apricots until chopped to small pieces.
- Add the rolled oats, hazelnut butter, pumpkin seeds, cinnamon, and nutmeg to the food processor. Pulse until they form a sticky dough.
- Press the mixture firmly and evenly into the prepared tin.
- Cover and place in the fridge for 1 hour or in the freezer for 30 minutes. When set, cut into 16 squares and store in an airtight container for up to 5 days.
- Drizzle melted dark chocolate on top.
